DH is pretty boring and I work late so I need something simple - not a lot of ingredients...

here are some of my standby's
"FRIED" pork chops 1 egg beaten combine 1 cup bread crumb, 1/4 cup grated parm. Sprinkle pork shops with salt, pepper, garlic powder Dip in Egg then breadcrumb mixture Broil in oven broiler (about 3-4 min each side)
BBQ Pork Chops 1 teaspoon garlic powder 1 teaspoon Dijon mustard 1 tablespoon brown sugar 1/4 cup bottled barbecue sauce Combine all ingredients. Dip the chops in mixture and lay on broiler pan Broil in oven broiler (3-4 min on each side)
Grilled Chicken marinate in oilve oil, balsamic vingear & montreal chicken seasoning - Grill in grill pan on stove. When almost done, top with Shredded Mozz cheese. Grill portobello mushrooms as you grill the chicken. Serve on a bun for a chicken portebello sandwich.
other marinades: *Olive oil, crushed garlic cloves, lemon juice * Crushed Garlic, grated ginger, soy sauce * combine plain yogurt with cumin, curry powder and salt. Dip chicken in and bake at 350 degrees until done * any store bought Italian Dressing * Any store bought teryaki dressing
Beans & Macaroni 4 cloves of garlic, sliced (more if you are a garlic lover) 1 can White Canellini Beans Oilve Oil Salt, Pepper, dried Parsely, dried Orgeano, Crushed Red Pepper (optional) Sautee garlic until soft in 4 tbs oil, add beans (with juice) and season with salt, pepper, etc .... Pour over cooked spaghetti
Ground Turkey or Beef Chili use the McCormicks Seasoning Mild Chili mix I usually sautee 1/2 onion and 2 cloved of garlic first, then brown meat. It calls for a can of red Kidney Beans and a can of Delmonte Sauce. I usually add diced tomatoes also. Serve over Rice.

Grill or fry kielbasa. Serve on kaiser rolls with mustard & sauerkraut. I split the kielbasa down the middle so it's easier to eat on the rolls.
I like to make pierogies with sour cream or egg noodles with butter & peas on the side. Not very figure friendly but a great hearty meal for chilly nights

Chicken cutlets, but I mix a few things in with the breadcrumbs to give them a lot of flavor, like parmesan cheese, good seasons italian salad dressing mix, McCormick Italian Bell Pepper and Onion seasoning, garlic salt, black pepper, italian seasoning, etc.
I freeze meatballs when i make a large batch so I can just defrost them and make meatball parm heros or have them with pasta
Stuffed chicken parm, which sounds complicated but is actually very easy and quick

A lot of what's been said, but we also do:
Turkey tacos -- brown up the ground turkey with some chili powder, cumin, garlic, etc. Make 1 avocado worth of guac (mash up the avocado, add garlic, lime juice, salt and pepper to taste, a dash of hot sauce and some diced tomatoes), dice up some tomatoes, serve with shredded cheese, sour cream and the big whole wheat wraps
Three cheese baked chicken -- Using the split chicken breasts, stuff this mixture under the skin on each breast, rub a little olive oil on, bake at 400 for about 40 min (depends on size of chicken). Mixture is ricotta, shredded mozzarella, grated parmesan, a little lemon pepper seasoning, oregano, basil, minced garlic, and salt and pepper to taste. So easy and so good! I usually do it with roasted potatoes and a roasted veggie (other things that can just go in the oven!).

balsamic & rosemary chicken
throw all the ingredients in a pan and cook in the oven...comes out just as good!
6 skinless, boneless chicken breast halves ground black pepper to taste 1 teaspoon garlic salt 2 tablespoons olive oil 1 onion, thinly sliced 1/2 cup balsamic vinegar 1 (14.5 ounce) can diced tomatoes 1 teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon dried rosemary 1/2 teaspoon dried thyme
DIRECTIONS Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes.

Tomatoes and cheese pasta (sooo easy and fast)
1 box of medium shells 1 8oz mozerrella (cut into tiny cubes) 1/4 cup olive oil 1 packet of italian dressing mix (7 seas or similar) red pepper flakes (to taste) 1/3 cup grated cheese 1 large tomato (diced)
make the shells. Drain and put back in pot. Add oil, pepper flakes, italian dressing mix, tomatoes, and grated cheese. Mix well. Add mozerella, mix, and cover pot. Let sit for about 5 minutes. Cheese should be melted and stringy when time to serve.
