You can add some salsa and serve over rice or add black beans, corn, cheese and make a taco.
If you chop it up into small pieces, make a dip with it.
You can make a pizza with black beans smushed as a paste/sauce, then add the chicken, salsa and cheese.
Or just a good old fashioned chicken salad.

I buy the Lite Caesar salad kits and put it on that and have it for lunch the next day!Yuummmm!!

I make a stock from the carcass and either make a soup or pot pie with the meat.

Thanks girls. I made the best pasta EVER and added some of the chopped chicken.
I sauteed onion and garlic in oil... then added steamed broccoli, sundried tomatoes and the chicken. I mixed this with parm, topped it with mozzarella and baked it. DELICIOUS!!!!
