We make marinate grilled chix often with a veggie & red potatoes w/ a little olive oil.
I also make fish with olive oil & lemon over broccoli rabe....yum!

salmon, catfish, tilapia, grilled chicken or pork cutlets, turkey burgers, veggie burgers (on WW english muffin). Once in a while I'll have a Sweet Potato with it, but usually just a small salad or some type of microwavable steamed veggie.

I saw this a few weeks ago on The Biggest Loser and tried it out and it is now my favorite dish...
1/4 cup chopped onions 1/4 chopped scallions (the recipe calls for either/or... I did both) plenty of chopped fresh parsley 1/2 cup chopped tomatoes
2 filets of fresh tilapia..
Place tilapia fillets on broiler pan and broil for 5 minutes on each side. While fish cooks coat frying pan with a spray of PAM. Saute onions, tomatoes, and parsley until onions are tender. Top fish with tomato onion parsley mixture and serve.
I threw in a dash of chili powder and some ground pepper...
Its DELICIOUS

-Brown rice, black beans, chick peas, and fire roasted tomatoes w/sliced avocado.
-Homemade vegetable soup
-Temeph w/Spelt pasta, veggies, and homemade marinara sauce.
-Blue Cheese, Pear, and arugula salad w/ homemade balsamic vinegrette

Sure!
All you do is get Organic Aruglua, Pears, & Blue cheese. Peel and slice the pears, put it on top of the arugula and then put a tiny amount of blue cheese on top.
The dressing: 1/2 cup of balsamic vinegar 1/4 cup EVOO 1tsp of sugar pinch of sea salt 1/4 tsp of oregano, basil, parsley, ground black pepper
so you get a small saucepan and put in the balsamic vinegar. cook on med heat until it boils. add sugar and salt. bring to a boil again, then simmer it. Let it simmer and reduce for 15 minutes. turn off heat and set aside. Then, after it has cooled for 15 minutes whisk in the EVOO and then add your spices.
NOTE: You can omit the spices, use less EVOO (like a TBSP) and add an extra tsp of sugar. Then let it cool down and serve it over Strawberries for dessert. It is to die for and low-fat/low-cal. HTH & Enjoy!
ETA: this should be enough dressing for 4-6 servings.
