I'm bad - I always buy the pre-marinated ones. I usually get Teriyaki to throw in a stir fry or Italian tomato basil for salads.

I used to make a baked tofu marinated in soy sauce, garlic, rice wine vinegar, and sesame oil that was super tasty.

I fake mine with whatever sauces I have in the fridge. Usually I go to the Chinese Supermarket and buy a load of sauces and mix them all together, for instance, I might use Hoisin, Tamari & Some dried garlic. Or Chili Bean Sauce, plum sauce, whatever I have lying around.

How long do you guys let them marinade? Yes, I'm a vegetarian, yes, I used to work in a health food store, but my tofu just isn't coming out the way I'd like it to. I like the packages of baked tofu. I want to make that. Yet, it never comes out like that.

I usually marinate it for like 20 minutes and cook it slowly in a non stick pan with the marinade until the marinade starts to evaporate and make a sticky sauce, its the sticky sauce that does it for me. Also, I do this with Tempeh. I love Tempeh. My mom always sent me to school with tempeh sandwiches when I was a kid...might be why I turned to humour to make friends as no one was swapping sandwiches with me.
