My husband said my meatballs were better than his grandmothers and I know that was a huge compliment. He always talks about her cooking.

I actually won't eat meatballs at a restaurant, they don't have the right texture or flavor. Nothing better than a homemade meatball IMO. My DH thinks I am crazy but he's not Italian, he is less picky about his meatballs than me. Chat Icon Chat Icon

Everytime I get them out, I instantly regret it.

From what people tell me, I think the best thing I make is shortbread. I am also partial to my chocoalte chip cookies--neither of those are my original recipes though.

French Toast. I always want to order it when I go out to a diner for breakfast and I'm always disappointed.

ETA: When I was a kid, my dad made "brown chicken". It's literally just fried chicken cutlets but they were just so much better when he did them. I make them all the time the same way he did but they never taste the same. He died last year and I'll never have his brown chicken again. Chat Icon

* cheesecake
* brownies
* arroz con gandules
* carrot cake (sorry, hofstra. i found this recipe long before i fell in love with your baking)
* rice pudding

none of these recipes are my own. i will happily share the recipes if anyone wants/needs.

I actually still only use your recipe for meatballs and everyone loves them.

This is the sausage and peppers recipe. I really don't measure anything, I go by taste and will add a little more or less of everything depending how I feel. Chat Icon

SAUSAGE AND PEPPERS

Ingredients

2.5 – 3 lbs of pork sausage with fennel
2 green bell peppers, seeded and sliced into strips
2 red bell peppers, seeded and sliced into strips
2 large sweet onions, sliced
2 cloves of garlic, minced
extra virgin olive oil, as needed
10-12 oz of plain canned tomato sauce
Kosher salt and pepper, to taste
2 tsp of oregano
pinch of red pepper flakes

Instructions

Drizzle about 2 tbs of olive oil into a pan and turn the heat to medium. Separate the sausage links by cutting the strings in between. Do not cut too close to the base of the sausage or you will slice the casing . When the oil is shimmering and the pan is hot add in the sausage. Cook the sausages, turning frequently, until they are browned on all sides, about 10-15 minutes.

Remove the sausage from the pan. Using a fork to hold each link steady slice it up into 1.5? slices. Once all of the sausages are sliced, return them to the hot pan. Add in a little more oil as needed so they don’t stick and burn. Continue to cook the sausage slices until they are nicely browned on each side and cooked through, about 15-20 minutes. Remove from the pan, cover and set aside.

Add to the hot pan the peppers, garlic and onion. Saute them in the sausage fat, adding extra oil as needed, until they are tender and browned. Season them with Kosher salt, pepper, oregano, and the red pepper flakes. Once the veggies are done, add the sausage back into the pan along with the tomato sauce and heat through, stirring gently to combine. Adjust the seasonings as needed. If a “drier” sausage and peppers is preferred, use less tomato sauce and conversely, add more to make it moister. Serve hot.

For the meatballs I also toss in a little torn basil. I like the flavor it adds. But that's optional. You can also use a combo of beef, pork and veal. I personally prefer all beef.

ITALIAN MEATBALLS

Ingredients

1 lb of 80% ground beef or a combination of beef and pork
1/2 cup Italian seasoned breadcrumbs
2 large eggs
2 tsp finely minced garlic
1/2 cup grated Pecorino Romano cheese
2 tbs fresh flat leaf parsley, finely chopped
3/4 tsp Kosher salt
Freshly ground pepper, to taste
Drizzle of extra virgin olive oil
2-3 slices white bread, crusts removed and moistened with water or milk
Instructions

Preheat oven to 350ºF. Except for the white bread, combine all of the ingredients together in a large bowl. Mix until just combined, do not over mix or the meatballs will be tough.

Break off small pieces of the moistened bread and add it to the meatball mixture. Mix into the meat and then continue to add more bread until it’s all combined.

Form the meat into balls and place them about 2" apart on a sheet pan lined with a Silpat® or aluminum foil. Bake for about 30 minutes or until golden brown. Alternatively, the meatballs can also be fried in oil until crispy and golden brown.

If serving pasta, add to the simmering sauce so the meatballs absorb the flavor and become softer.

I really don't have a recipe!! LOL I eyeball everything!!! But this is what I would think it be.

But the meatballs are super easy.
Have to use 4c bread crumbs... I would say about a 1/2 - 3/4
Some fresh pepper
I add more fresh parsley to it.
1 egg if you are using about a pound of meat
A little milk
Grated parmesan cheese about a half cup (i love cheese so it might even be a little more)
mix these ingredients first then slowly add your meat
Sometimes I do add powdered garlic.

For meat, I some times use different meat... I have used Kobe ground beef with pork.
I also like to use ground beef/ pork/ veal

I then dab each meatball with some olive oil and then roll them around
(suggest plastic gloves for that)

I then fry my meatballs in an old school electric skillet that was my mother in laws probably from the 1970s. I don't even think they make them any more. LOL

I am sure you can bake them at 350 for 20 minutes too.

BTW don't over roll your balls... You don't want them to get too tough.

Chicken Marsala. I don't know about better than anyone, but my husband nor I have ever had it in a restaurant that we think is as good as mine.

And one year on here someone won a recipe contest for a summer strawberry salad and I make that for every party because everyone loves it.

Ingredients:
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion (I use red onion always)
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional- I
don't use that) or fresh jalapenos to taste

Instructions:
In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper or jalapenos if using. Refrigerate 1 hour for best flavor, or serve immediately.
