What is your best cooking/baking tip?

I thought it would be great for everyone to share their best cooking and/or baking tips or advice!

Mine is to always pound chicken before you cook it, IMO it makes a world of a difference.

Use pot holders!!!...or have burn cream on hand.

Don't lift the cover off rice

Mine is to do with cooking meat, always use the Cheek, Nose, Chin method to tell if its done to your liking.

And, if you are making a chocolate cake that calls for water, substitute coffee instead. It really makes chocolate taste better.

Almost anything that uses lemon juice could be even better with lemon zest! Chat Icon

Cookie scoops aren't just for cookies! I use them for my oreo truffles, meatballs, you name it!

Use an ice cream scoop with the little release thing to scoop batter into cupcake liners. You'll get cupcakes that are always the same size and about 2/3 full.

Do your "mise en place" - meaning, get all of your ingredients ready and measured... it makes everything go much more smoothly!

I also like to check off ingredients as I put them into my baked goods, this way you never forget the baking soda or salt!

Parchement paper is the BEST for lining cookie sheets (or a silpat of course).

I'll try to think of more!

Always make sure the butter is the temperature it says it should be. Don't use freshly microwaved butter for chocolate chip cookies, they will come out like pancakes.

I nuke my butter and then put it in the freezer if I'm pressed for time. It's usually the first thing I do 30 minutes before I'm ready to bake.

Also, refrigerate cookie batter in between batches. Cookies will have a nicer shape and be easier to put on the sheet.

Leave steaks out for about a half hour-hour (depending on size) so it gets to room temp.

It makes for a better steak.

For baking, make sure eggs are room temperature.

Don't overmix your dough.

Put an oven thermometer in your oven! You would be surprised at how many degrees it can be off from what you thought it should be.

pat your beef dry with a paper towel before cooking, it makes a huge difference.

Don't let not having an ingredient stop you from making a dish...You can google that and find something similar to use.

Just because a recipe is wrote doesn't mean you have to make it 100% that way. You don't have to add the things you don't like and you can add the things you want.

Buy a mandoline...it makes the best salads and homemade potato chip slices!

Also - cook with love. Sounds silly but I SWEAR that when I am angry, stressed or agitated you can TASTE it in my food. It's never as good as when I just breathe and cook.
