What kind of cutting board do you use??
I have a bamboo one and I know there has got to be a better one out there....

I use plastic ones. I have one for meat, poultry and fish, and another for vegetables. I have a much larger one that has a well around the edges for carving roasts and stuff. I've gotten them at Ikea, and the big one came from Target. I tried using a wood butcher block for a while but I just couldn't keep up with the maintenance (oiling, etc) on it, so went back to the plastic.

ditto - i use thin flexible ones for meat and thicker ones for every day, they are all dishwasher safe and so easy to use.

Easy to clean, can't really scratch it and no juices from meat, veggies, etc..can get into the groves like a wood or plastic one.

same here. I also have wood ones that I use to cut "cooked" meat on. Never raw meat!

I used to have the colored plastic ones for meat, fish, etc.
They got really scratched up. With all of the talk about plastics and leaching I switched to glass. I can always sharpen my knives.

You can always sharpen the knife. It's better then having bacteria left behind on the board IMO.

I have the Epicurean cutting board. It's the only wood surface cutting board that's will not harper bacteria and they are dishwasher safe.
