what should i do with quinoa and eggplant?
Making quinoa for the first time and I have some local eggplant. I was thinking of sauteeing the eggplant with onions and tomatoes and serving it on top of the quinoa with feta? Any other ideas?
Do I need to know anything special about cooking quinoa?

Not sure, I think there are different kinds, when I cook mine they look like little spirals when they are done.
that sounds really good though!

I like to grill mine and serve with a side of homemade peanut sauce.
I got the idea from here a few years ago.
If you google, you can get a simple recipe, I'm sure.

I forgot about how much we love that recipe.
I think you way sounds nice.
I like to grill my eggplant too & then sometimes turn it into parmesan after. So you could add the quinoa to the sauce/parming.

I sauteed the eggplant with grape tomatoes and added feta. I also made peppers and onions for DH to add to it. It was really awesome! I wish I had the energy and willpower to become a vegetarian.
