What should I serve?

I've been single for so long and with my kids 95% of the time so I haven't done this in so long!! I'm having a double date night at my place (no kids), so the guy I've been seeing is coming over and so is another couple. I have a couple of hours to shop and prepare food.

I do enjoy cooking and entertaining but do so much for my kids and myself to be honest I'm not sure how much energy I want to spend doing so on a Friday night. They are good friends of mine so it's totally fun and casual.

Both guys like meat! And mine doesn't eat too much pasta or rice. I think we all drink wine and beer, but the other couple may drink liquor.

So, what do I make? Easy apps like chips and dip and then a meal with a side (like roast chicken and salad) or do I do just lots of apps?

The other option is to go out LOL!

roasted veggies maybe? They are easy and taste good.

I'm a fan of actual meals for dates (as opposed to appetizers)... but this means you will be in the kitchen a fair amount of time.. so maybe something with minimal prep?

How about a roasted beef tenderloin with some asparagus and garlic mashed potatoes? It's sooo easy to prep and make so you don't have to be standing in the kitchen the whole time.

You can have wine, cheese and crackers with some cured meats as a welcome/appetizer. I'd do a soft cheese, a pungent cheese and a popular cheese (like Brie, Stilton and Cheddar) with some sliced pepperoni or salami. Have some grapes and/or strawberries available as well.

For the sit down you can do a niced mixed greens salad with a simple vinaigrette. Next course is main and then a light dessert - maybe a slice of sponge cake with strawberries and whipped cream?
