What to do with 20lbs of potatoes
My husbandthinks the world is coming to an end so when he shops he buys staple items in bulk. Now I'm stuck with all of these potatoes that will go bad. What can I make, and possibly freeze as well?

Mashed potatoes, potato soup, potato salad, homefries, put in beef stew or potatoes and eggs, french fries or oven fries . You can't freeze some of the stuff I suggested but just trying to give you some ideas.

freeze: sheppards pie potatoes skins maybe twice baked... maybe not sure if they freeze well homemade gnocchi potato pancakes
make: mashed skins twice baked au gratin stew potato puffs in wontons wrappers potato pancakes baked potato soup loaded baked potatoes

Maybe have a create your own baked potato night once a week for the next couple of weeks.
Have various toppings (chili, cheese, bacon, sour cream).

LOVE this recipe for Au Gratin Potatoes
1 spray(s) cooking spray 1 Tbsp butter 1 medium onion(s), thinly sliced 2 Tbsp all-purpose flour 2 cup(s) fat-free skim milk 2 pound(s) uncooked Yukon Gold potato(es), thinly sliced 1 cup(s) low-fat shredded cheddar cheese 1 tsp table salt 1/4 tsp black pepper Instructions Preheat oven to 375°F. Coat a 2-quart covered baking dish with cooking spray.
Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper.
Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.
Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.

Knors lentil soup packet has a KILLER receipe for potato lentil soup on the back. Calls for 3 or 5 lbs and its DELISH!

i love potatoes!
mashed potatoes sheperds pie potato and leak soup hash browns baked potatoes french fries scalloped potatoes potato casseroles german potatoe salad -- or any potato salad potato au gratin potato pancakes
idk which of these freeze well though...

We make a copycat version of the double stuffed potato spring rolls from Grand Lux and freeze them.
Basically, you just take mashed potatoes, add some bacon and chives, and then roll up in egg roll, wonton, or spring roll wrappers. Then fry until lightly golden brown. At that point, you can freeze them.
When you want to heat them up, I defrost them and then throw them back into a saute pan with oil to heat up (you can microwave first for a minute to heat up the insider more).
Serve with some cheese shredded over the top, more bacon bits, and chives.
Yummy.
