What to do with stew meat (beef) in the summer?
I have about a pound and a half of stew meat in my freezer. It's not going to last until the winter. We really don't want to eat stew in the summer
Are there any summery dishes you can use stew meat with?
It's kind of tough, so I don't see making kabobs or anything else on the grill.
I could be wrong though. Any advice would be appreciated!

that's hard... becuase lean meat like that must be boiled for a long time before it gets tender... you can't bbq it or something.
the only thing I can think of is grinding it up and mixng something fatty with it and making burgers?

Chipotle's steak tacos uses diced meat....Try dicing the cubes up and then marinating it a mexican type spices. Use some lime when marinating to help tenderize the meat.

shish kebobs, but make sure to marinate it for a long long time, at least overnight. I use redwine vingar and soy sauce for mine.

I would just make something in the crock pot.
You could simmer for a few hours with a mexican based sauce like previous poster said and serve with wraps and a salad for a summery dish.
