what type of icing for a homemade ice cream cake?
I'm making a homemade dinosaur ice cream cake but I want to you an icing that will not crack in the freezer and isn't to sweet. The icing will be dyed and decorated to look like a dinosaur. TIA

cool whip or for homemade get whipping cream and powdered sugar (I would gradually add since you dont want it sweet) and blend until its puffy.

fudge. I decorated cakes working for haagen dasz in college. it's awesome but it's a two step process and you need to work quickly.
get whatever hot fudge you like on top and make she it's smooth. take the cake out of the freezer and quickly ice the top and sides. it won't cover the whole cake.
pop it back in the freezer for a bit. go at it a second time, recovering the whole cake. it should all be covered by then. use a bag and piper to pipe some wipped cream on the edges.

duh, I just read your other requirements.
when we did white cakes or icing cakes (dyable) we used a powdered mix from the Brill company. we added water and mixed it in the stand mixer to desired consistency.
it worked great in the freezer...kept well for a few days without looking funky or cracked. regular buttercream frosting MAY work but it probably won't last as long without cracking in the freezer.
I would go to a cake supply store and ask them about Brill creams.
