4 Beat egg yolks in small bowl; stir small amount of sugar mixture into egg yolks. Slowly add egg mixture to remaining sugar mixture in saucepan, stirring rapidly to avoid lumps. Cook 1 minute over low heat. Remove from heat; add vanilla.

For this recipe, and only 4 egg yolks, I would do it by hand with a wire whisk.
But depending on the recipe and the amount of eggs, I will sometimes use a hand mixer.
Here, I think you just want to combine the eggs but not incorporate a lot of air, so the whisk would work better, I think.
