when you dont feel like cooking...

what do you make for dinner? what kind of meals can i make extra of and freeze? im always worried it wont taste the same.

I make meatballs and freeze them.

I make little quiches and freeze them so they are easy to reheat.

I make breakfast for dinner when I really don't feel like cooking too much.

I love the Bertoli forzen package meals - they are great in a pinch and onl;y take 10 minutes to cook.

The chicken parm and penne is our favorite.

In a pinch -- pasta with some frozen veggies. Mac n cheese. Quesadillas.

I buy and freeze bobelli pizza crusts and keep shredded mozzeralla in the fride and I make pizza 10 mins!! Yummy!!

I always keep frozen ravioli on hand. I also make pasta and meatsauce and it freezes very well..

in the freezer, currently I have frozen

minestrone soup
bolognese sauce
chili

I do enjoy picking up a few ready made things from trader joes. The other night we had there rosemary balsamic chicken, I just served it with salad an easy meal!

I also buy the 90 second rice, the microwave ready potatoes (since it's just the two of us eating, it's worth it to me to spend the $1.50 on those, even though I don't NEED to)

It's nice to buy the rot. chicken & just serve with a veggie

Trader joes def. has the best frozen veggies (some marinated)

I find steak rather easy as long as I remember to defrost it the night before!

A good quick fix in our house is a roasted chicken from the supermarket. then I'll do some sort of steamed (freezer bag) veggies and 90 second Uncle Bens rice bag. A fairly healthy dinner is on the table in under 10 minutes.

I make the following and freeze:

Chili
Sauce
Meatballs
Shells (stuffed w/ turkey meat and artichokes - Giada's recipe)


I'll make these things on Sundays and use leftovers for other things during the week:

Roasted Chicken (leftovers great for Chicken Cesare/Greek Salads, Tacos, Quesadillas)

If we eat early enough on a Sunday, I'll take the chicken carcass and make a pot of chicken soup (no noodles) and freeze the broth.


I keep the following in my fridge/freezer for quick fix meals:

frozen ravioli (the organic ones from BJs)
gyoza dumplings (trader joes)
Chili lime chicken burgers (trader joes)
Flour Tacos - quesadillas, tacos
English muffins - em pizzas

Sometimes, I'll have DH pick up a pizza dough from the pizza place, and we'll make our own pizza and salad for dinner

We make and freeze:

meatballs
individual meatloaves
chili
beef stroganoff

If we have none of the above, then either frozen pizza, chicken patties and frozen veggies and fries, salad with hard boiled egg and tyson chicken strips, if we have defrosted chicken we'll grill it or pan fry it and make quesadillas with cheese

I second the rotisserie chicken idea. The ones from Costco are really nice and meaty and only $5. In our house we get at least two nights out of it, and maybe some leftover for a sandwich for lunch too.

-pancakes
-tortellini (we always have homemade sauce in the freezer)
-spaghetti & meatballs (we usually have homemade meatballs frozen)
-spaghetti with garlic, oil & red pepper flakes
-grilled chicken
-tomato, mozzarella, pesto panini
-grilled cheese

i always freeze soups when I make them. escarole and bean soup or lentil mostly.

Ravioli

egg & avocado sandwiches

grilled cheese and canned soup

leftover frozen pizza

veggie burger & frozen sweet potato fries

Cous cous is really quick too. I saute some onion and garlic, throw in some craisens, dried apricots or currants and any herbs that I have on hand

If I'm willing to cook a little.. I'd do BLT's, Bacon and Eggs or Tacos.

I usually have sauce in the freezer - so I'll often throw on a pot of pasta and make a salad. I think sauce is better when it sits.

Sometimes we'll just do tuna sandwiches with chips and a quick cucumber salad.

Here are a few of my quick meals:

When I make a big pot of sauce, I will fill 2 or 3 tupperware and freeze it. I usually put a couple of sausage and meatballs in each. If you need a quick meal, I run the tupperware under hot water for a couple of minutes to soften the sides and than loosen the "block" of sauce into a pot and it is defrosted and cooked in about 20 min.

Sautee some kielbasa and perogies.

I buy frozen fish from BJ's (teriyaki salmon, coconut shrimp or parmesan crusted tilapia) and pop them in the oven for 20 min. and make them with rice and veggie.

During the summer, I always keep hot dogs and hamburgers to pop on the BBQ.

Swedish meatballs and noodles (I buy the bag of frozen meatballs from BJ's and throw in some nutmeg, half and half and the meatballs) and it's all cooked in 25 min. or so.

Pick up a rotisserie chicken from Stop and Shop and make with veggies and another side.

Breakfast for dinner: eggs and bacon, pancakes, waffles, crepes

I was just going to say, Trader Joe's is AWESOME for meals in a pinch. I always have on hand from them: Whole Wheat Couscous, Sweet & Sour Tempura Chicken, and Teriyaki Beef. They also have really good Lime Chicken Burgers. All of these are my "go-to" when I don't feel like cooking.
