Our favorite is Disney's Port Orleans - French Quarter for families with fewer than 5 people but we may choose a different one for a particular client based on their likes and needs.

How many are people are in your party?
I could be wrong but I think Port Orleans Riverside - Bayou section is the only one that can accommodate 5 (has a trundle bed) unless you want the Cabins at Ft Wilderness.
If I was going to pick a moderate I would go with Port Orleans French Quarter if you want a smaller resort or Port Orleans Riverside. POFQ has a small feel, nice resort - access to the amenities over at Riverside if you want them. POR is a nice resort and you can go next door to POFQ if you would like.
Theme? If you have a girl - I would suggest considering the new Royal Guest Rooms (think princess rooms) at Port Orleans Riverside. You can only do those rooms if you are 4 (or I believe 4 and 1 under 3 who would be in a crib or pack n play).
It is more spread out so you might want a car - but if you have a boy who likes pirates - Caribbean Beach Resort has pirate themed rooms.
Then there is CS is another choice. I have a friend who goes and stays there with her son (2.5) and loves it and the pool. I personally wouldn't choose it because it is a big convention hotel but

What's your party size? Who's in it?
In general, i LOVE Port Orleans French Quarter. It's much smaller and more intimate and all recently renovated. It's just so beautiful and peaceful.
However, if you have some little pirates or princesses, then the storybook rooms at POR and CBR might be for you. All things being equal, I LOVE POFQ.
