Why are my chocolate chip cookies falling flat and spreading?
I consider myself to be a baker, but weirdly enough, these cookies are never baking right lately! I bake tons of things, but of all things to keep having trouble with....!
Does anyone have any tips/suggestions for how to get a higher rising choc chip cookie? I've tried freezing the dough, using a silipat, etc.

too much butter or the butter is too soft. Baking soda is not fresh.

maybe the baking soda or baking powder is too old. also, in more delicate recipes I find that they sink less if they are mixed evenly in the dough and also folded in rather than heavily stirred in.

Agree with the above - Also:
Are you putting the raw dough on a warm pan, or cooling the pans between batches? I usually put my cookie sheets in the freezer to quickly cool them in between batches so the cookies don't spread too much.
And is it a recipe you are familiar with? Because I find choc chip cookie recipes vary widely -- some make very flat, thin crispy cookies, other make puffy cake-like texture cookies, and some are in between (thicker and chewy, not too soft or crispy - my faves!).

This exactly!! My other thought was that the butter was too soft!

I think it might be the soft butter (and too much of it) - it was a Food Network recipe. Maybe I should try Toll House cookies again. Do any of you freeze your dough or add extra flour so your cookies don't fall?

I saw a tip online to form your cookies into balls, then break them in half and smush the smooth sides together leaving the "rough" edges out, it's a little bit of a PITA to do but it makes the cookies perfectly.
