I make a pumpkin pie....I LOVE the Libby's recipe, but substitute the following:
Splenda for sugar Egg beaters for eggs Low fat French Vanilla International Delight non-dairy creamer for evaporated milk.
Yum!

you could always make that diet coke cake. my coworker just made one... mix any flavor cake mix with diet soda..bake, and then top with fat free whipped cream when cool.. it is delicious! (she made hers with chocolate cake mix and diet cream soda)

Chocolate cakes
POINTS® Value: 4 Servings: 14 Preparation Time: 8 min Cooking Time: 60 min Level of Difficulty: Easy This cake’s a winner. It’s like a rich devil’s food cake but it's slimmed down by adding a secret ingredient: canned sauerkraut. (Yes, you read that right.)
Ingredients 1 spray(s) cooking spray, flour (baking) variety suggested 2 cup(s) all-purpose flour 1 1/3 cup(s) sugar 1 1/2 tsp baking soda 2/3 cup(s) unsweetened cocoa 1/2 cup(s) butter, melted 1 1/2 cup(s) hot water 1 tsp vanilla extract 1 cup(s) sauerkraut, pureed until smooth 1 tsp unsweetened cocoa
Instructions Preheat oven to 350°F. Coat a Bundt pan with cooking spray.
In a large mixing bowl or in the bowl of an electric mixer, combine flour, sugar, baking soda and 2/3 cup of cocoa. Add melted butter, hot water and vanilla extract; mix well. Add sauerkraut and blend thoroughly.
Pour batter into prepared pan; bake in center of oven until a tester inserted in center of cake comes out clean, about 55 to 60 minutes. Cool cake in pan for about 20 minutes and then turn out onto a baking rack to cool completely. Sprinkle with 1 teaspoon of cocoa powder before slicing into 14 pieces. Yields 1 slice per serving. Notes You can easily change the flavor of this cake by adding strong coffee instead of the hot water or adding cayenne pepper and cinnamon with the vanilla.

Weight Watchers pumpkin mousse My Weight Watchers leader gave us this recipe last year. I don't know if it's an official Weight Watcher recipe or something she came up with on her own.
It's a lifesaver when everyone else is stuffing their faces on pie and you're feeling sorry for yourself. It satisfies your sweet tooth and your need for something creamy, too.
And best of all, it's only 1.5 points for one cup of mousse.
Pumpkin Mousse
2 small packages of instant sugar-free vanilla pudding 2 cups of no-fat (skim) milk 1/2 teaspoon pumpkin spice 15 ounce can of pumpkin 8 ounces of fat-free Cool Whip
Make pudding first, then fold in ingredients. Serve!

Thanks for posting! I'm going to try this on Thanksgiving. It will give me something to eat while everyone else it eating apple pie!
