Yummy WW banana chocolate chip muffins I made...recipe inside!
I found a recipe on the ww site for mini banana chocolate chip muffins. I decided to make them, but I didn't have all the ingredients. So, I modified it a little, and they were very yummy!
It calls for 36 mini muffins for 1 point each, but I made 12 regular sized muffins. According to the recipe builder, each regular size muffin was 4 points. Enjoy!
Banana Chocolate-Chip Mini Muffins Ingredients
1 cup(s) light artificially sweetened vanilla yogurt (I only had 1 container of ww yogurt which is 6 oz. So, I added 1/4 cup of applesauce to make the total of 1 cup for the recipe). 1/2 cup(s) fat-free skim milk 1/2 cup(s) uncooked quick oats (I didn’t have this either, so I used 1 ½ packets of quaker instant oatmeal. I used apple/cinnamon flavor, because that’s what I had, but you could probably use any flavor). 1/2 tsp vanilla extract 1 large egg(s), beaten 1 large banana(s), mashed 1/4 cup(s) unpacked brown sugar 1 1/4 cup(s) all-purpose flour 1/2 tsp baking soda 2 tsp baking powder 1/2 cup(s) mini chocolate chips (I didn't have these so I used 2/3 cup semi-sweet chocolate chips. I upped the amount of chips a little too!) 1/2 tsp table salt 1/2 tsp cinnamon sugar
Instructions Preheat oven to 375. Combine yogurt, milk, oats, vanilla extract and egg. Set aside 5 minutes for oats to soften; stir in mashed banana.
In a separate bowl, stir together brown sugar, flour, baking soda, baking powder, cinnamon sugar, and salt. Stir flour mixture into yogurt mixture to moisten ingredients. Do not beat. Dough will be very thick. Stir in chips.
Spoon batter by heaping tablespoons into 3 mini-muffin tins coated with cooking spray.
Bake until golden brown, about 15 to 18 minutes. Yields 1 muffin per serving.
