Healthy lunches
I don’t really like cooking but I need super easy, healthy, make ahead lunches that I just need to reheat. I find that I want warm food during the winter months so salads don’t seem appealing to me.
Any suggestions?

Healthy lunches
Soup. There are so many healthy soups. I make on Sunday and have for lunch during the week.

Re: Healthy lunches
Casseroles are our go-to for weekday lunches.

Re: Healthy lunches
Healthy burritos - a low carb wrap, roasted veggies, black beans, cheese, etc.
A "loaded" baked potato with roasted veggies and cheese
Do you have access to a toaster oven? If so you could do homemade pizza with veggies and such
Definitely soup
I usually just cook a lot of whatever and the leftovers are my lunch. I made a semi healthy pasta carbonara with turkey bacon, spinach and mushrooms and I took that twice this week.

Healthy lunches
I don't eat meat, so mine are vegetarian: I do a lot of soups. I made a big pot of my own minestrone soup this week: carrots, celery, onions, garlic, zucchini, shredded cabage & white beans. Separate into smaller containers. Lentil soup is a favorite here too. I know you said hot, but I do wraps with hummus & tons of veggies/greens. Veggie burgers can be heated in a toaster oven/microwave. I like to toast my bread, add humus and veggies to bulk it up.
