Clam sauce?

I have been craving clam sauce lately and would rather make it at home then go out. Anyone have a sure fire, easy recipe? I have found a lot online, but wanted to see what you ladies thought.

Re: Clam sauce?

Red or white? I make this a lot when I'm on my own for the night (when DH is out) - it's a really simple version, but you may want to use fresh clams instead.

I usually do an easy marinara sauce - saute garlic in olive oil then add a can of puree (I like it chunky, so I also add a can of chopped or whole plum tomatoes), salt pepper and basil and then add a can of clams with the liquid. Let simmer for about 25 mins.

I also like to do a white clam sauce with fresh spinach - saute garlic in oil, add can of clams with the juice and a cup of dry white wine (you can add more or less to taste), then wilt the spinach in it.
Sometimes I add the can of chopped tomatoes to that as well.

Re: Clam sauce?

this is my personal recipe

2 large cloves garlic, chopped
2 tablespoons olive oil
2 (6.5 ounce) cans chopped clams (undrained)
salt and pepper to taste
2 tablespoons dry white cooking wine
2 tablespoons chopped fresh parsley
1/2 teaspoon hot pepper flakes
2 tablespoons red marinara sauce (optional)
1/4 cup parmigana cheese

DIRECTIONS:
In a large skillet, saute the garlic in olive oil on medium heat until garlic turns golden (be careful not to burn garlic).

Stir in the undrained cans of chopped clams, salt, pepper, wine, parsley and hot pepper flakes.

Change heat to med-low and simmer the mixture for 7-8 minutes, until the sauce has reduced by half and has thickened to your liking.

If you want to make your sauce red, add a few tablespoons of Marinara Sauce(or any store bought red sauce).

Before serving, toss with the parmigana cheese.

Spoon the clam sauce over your favorite pasta, and serve with a green salad and some garlic bread.
