Shredded beef
What to do with it?
I put a 3 lb roast in the crockpot today and then shredded it
My dh will eat it w/ BBQ sauce, but I try not to eat that (low carb)...
Any other ideas?

maybe sautee a large diced onion and a couple diced peppers, some sliced mushroom, and add tomato paste, water, then a pile of seasoning... cayenne, smoked paprika, cumin, oregano, and coriander would make it pretty mexican-ish.
conversely, it could be made into something sloppy joe-ish, by using just the onion and peppers, and adding a bit of cayenne, pepper, and oregano....
or make something quesadilla-ish, but heavy on the veg and meat, and light on the quesa......
can't think of anything else....
