Italian rice balls recipe
DH brought one home from the pizza parlor last night and I tried it for the first time. It was really good!
They seem pretty easy to make, but all the recipes I keep finding have either just cheese or have a combination of meats...
The one I had last night was just ground beef and cheese in the middle...I don't really like combining meats, so I'd like to make this kind.
Anyone have an easy recipe?

I don't have a recipe but I know my MIL makes this mixture for the center:
Ground beef - browned and then added to sauce (Sometimes she addes finely chopped onions when browning). Cheese and peas (sometimes she doesn't use the peas). Mixes it all up and adds it when making the rice balls.

This is how I make mine...
Make rice, mix in one egg (or 2 depending on how much rice you have) add cheese to taste (pecorino is fine). You want a very sticky consistancy. Chill. I leave mine in over nite. It helps when forming the balls. Brown chop meat, add in your favorite marinara sauce (mixture should be thick), add peas (optional). Form balls about 2" in diameter. Make whole in the middle, spoon in meat mixture, put in cube of Mozzerella (Polly-O is fine, fresh doesnt melt as well), re-form ball. Put back into the fridge to chill at least 1 hour. Again, it helps the balls not to fall apart when frying. After an hour or so beat up 2 eggs, dip balls in eggs and coat in bread crumbs, either plain or italian. Fry in about 1/2" of oil, moving them constantly on all sides. Watch them closely (they get dark quick). You want a nice golden crust on them.
Serve with extra Marinara sauce on the side.
