Question for those that have made french toast casserole...
I know the recipes that many of you gave on here says to let the mixture sit overnight so it can soak into the bread and than cook the next day...but I am afraid the bread is going to be soggy if I let it soak over night? I am thinking about making it for the first time for Christmas eve and am nervous.
ETA: What type of bread do you use? Regular white bread or french bread?

You really need to let it sit overnight but a french toast casserole is supposed to be soggier than regular french toast. It is almost like a bread pudding. I use Challah bread for mine but I would not use regular sliced bread. You want something thicker and more substantial to absorb the liquid.

Re: Question for those that have made french toast casserole...
when we make french toast for ourselves, we merely beat 3 eggs with about a cup of milk and a teaspoon of cinnamon. we cut ciabatta bread into thick slices, soak them one by one for about 2 min, and then flip it over and soak on the other side another 2 min. We pick it up, let a bit of the excess drain off, and then fry in butter until cooked.
we serve it with real maple syrup
