What can I do with a whole chicken?
MIL bought 3 whole chickens from Sams, and she gave one to us. Ive nver cooked a whole chicken. Is there anything special i can do to/with it?

We usually throw it in a roasting pan, on top of some chunks of potato, onion, and carrots; season up the chicken with salt/pepper, and butter it up. If we have a lemon on hand we'll cut it up and throw it in the cavity.
The veggies come out nice and soft and roasted, and you don't need to dirty an extra pan for sides.

Seriously though, I will bump a recipe that I tried that was super good.

This is a recipe from the naked chef...it's called my perfect roasted chicken. wash and pat dry. put kosher salt in the cavity cut the memebrane between the skin and sprinkle with kosher salt. Add fresh herbs (parsley, basil, marjoram (I substitute thyme for marjoram)). Cut slits in the legs and rub the herbs in. Cut a lemon and place in cavity with bay leaf, rosemary sprigs. pour olive oil in with the herbs between the breast and the skin. Tie up the chicken. Oven should be preheated to 425F. Cook on each side for 5 minutes each, then breast up for an hour (or until done).
It is quite delicious (just made it over the weekend)

I just stuff the cavity with lemons and rosemary - and put some low sodium chicken stock in the pan to baste with.

roasted chicken with 40 cloves of garlic
3 bulbs of garlic 60 grams of butter 1.5 kg chicken 2 teaspoons salt 2 teaspoons fresh cracked pepper 1 cup of water
Preheat oven to 200 C. separate cloves from garlic bulb, leaving unpeeled. rub butter over outside and and inside of chicken. I usually had some rosemary, thyme and some lemon juice. Pick a spice Put salt and pepper on inside and outside of cavity. place half of garlic in chicken. Tie legs with kitchen string.
Place rest of garlic in a roasting pan in a single layer and place chicken on garlic. Pour water carefully into pan. Roast chicken for 1 hour and 20 mins brushing occasionally with pan juices. Cook until browned and cooked thru.
rest chicken covered in foil for 15 mins. Serve.

Mimi's Sticky Chicken ©Mimi Hiller, 1985-2001 This is the best and easiest roast chicken you've ever tasted. It seems a little strange, but it's the only one my family will eat, and company loves it, too!
2 teaspoons salt 1 teaspoon paprika 3/4 teaspoon cayenne pepper 1/2 teaspoon onion powder 1/2 teaspoon thyme 1/2 teaspoon white pepper 1/4 teaspoon garlic powder 1/4 teaspoon black pepper 1 whole roasting chicken, about 3 pounds 1 cup chopped onions Combine all spices (first 8 ingredients) in small bowl. Rinse chicken, inside and out. Drain well.
Rub spice mixture over skin and the inside of chicken.
Place in a resealable plastic bag, seal and refrigerate overnight.
When ready to roast, stuff cavity with onions.
Place chicken breast side down in roasting pan.
Roast uncovered at 250ºF (that's not a typo...it's really 250º! Anything over 225º is safe as long as the chicken reaches an internal temperature of at least 155º, which this does, and more) for about 5 hours. Baste occasionally with pan juices or until pan juices start to caramelize on bottom of pan and chicken is golden brown.
Serves 4.
