I make one that is really easy.

I clean 4 green peppers, put the cups in a baking dish and cut up the tops.

I fry up a 1 lb of ground beef, adding the tops to the mixture along with a little garlic powder, Mr Dash, and what ever other spices you wnat to add.

I then add a large (14oz) can of tomato sauce to the meat mixture and let cook for a little bit.

I dump that mixture in to a bowl then add about 3/4 of a cup of cooked rice. Add some shredded cheese to the mixture. Mix well.

Scoop the filling into the pepper cups and top with more shredded cheese.

Cook in a 3050 degree oven for about 20 mins or so until cheese is melted and peppers are still crisp but cooked.

YUMMY and easy!

pS...I hav also used ground turkey insterad of beef and came out yummy also!!
