Core Recipe I made tonight...Chicken Chili with Barley
Got this off the WW Core message boards. Made this today and it was really good. Not really chili weather but the chicken makes it lighter then regular chili. Topped with FF Sour Cream and it was tasty.
Chicken Chili with Barley
28 oz diced tomatoes 1 (10 oz) can Rotel tomatoes 4 cups fat free chicken broth 1 cup barley 1 tbsp chili powder 1 tsp cumin 2 garlic cloves, chopped 1 onion, chopped 1 (15 oz) can black beans, drained and rinsed 2 cups cooked chicken breasts, cut into small pieces
In large stockpot, combine first 8 ingredients, bring to a boil. Reduce heat, cover, simmer for 45 minutes (stirring occasionally) Add beans and chicken and bring to boil again. Immediately reduce heat and simmer another 15 minutes. Add more water or broth if chili becomes too thick for your liking.
*I didn’t add anything…I like it thick.
Makes a bunch....around 10 cups.
I am doing CORE this week but I just pointed it out and for one cup it is 3 points so still really good. This was based on the recipe yielding 10 cups. Even though I am doing CORE I measured out one cup and after that I was very full. This chili is very hearty.
A few things I learned while making this:
- I like barley - Barley can be found next to all the dried beans in the supermarket. - Rotel is not a type of tomato it is a brand. It is diced tomatoes with green chilies.
