I love this recipe. I don't like too much dressing so I use less mayo & 1 1/2 tablespoons of dijon mustard instead of dijonaisse. Enjoy.
Ingredients 2 lb small red or white potatoes 1 kg 1 cup HELLMANN'S® Real, Light or Ultra Low Fat Mayonnaise 250 mL 2 tbsp HELLMANN'S® DIJONNAISE Creamy Mustard 30 mL 2 tbsp chopped fresh dill or parsley 30 mL 2 tbsp white vinegar 30 mL 1/2 tsp salt 2 mL 1/4 tsp pepper 1 mL 1 cup chopped celery 250 mL 1/2 cup chopped green onions 125 mL Preparation Instructions 1) Cook potatoes in boiling salted water 15 minutes or until tender. 2) Drain well, cool and cut into quarters. 3) In large bowl combine mayonnaise, Dijonnaise, dill, vinegar, salt and pepper. 4) Stir in potatoes, celery and onion. 5) Cover and chill 1 hour to blend flavours.

My mom made this Weight Watchers one last weekend. It was sooooo good.
Potato Salad
POINTS® Value: 4 Servings: 4 Preparation Time: 10 min Cooking Time: 30 min Level of Difficulty: Easy Ingredients • 1 1/2 pound uncooked red potato(es) • 3 slice uncooked turkey bacon • 1/4 cup reduced-calorie mayonnaise • 2 Tbsp red wine vinegar • 2 Tbsp parsley, fresh, chopped • 1/2 tsp table salt • 1/4 tsp black pepper, freshly ground • 1/2 cup scallion(s), chopped Instructions • Place potatoes in a large saucepan and pour in enough water to cover them; set pan over high heat and bring to a boil. Reduce heat to medium and simmer until potatoes are fork-tender, about 20 to 30 minutes; drain. When potatoes are cool enough to handle, slice each into eight pieces. • Meanwhile, cook bacon in a hot skillet or in the microwave until crisp; drain on paper towels. Break bacon into small pieces. • In a small cup, combine mayonnaise, vinegar, parsley, salt and pepper. • Tranfer cut potatoes to a large bowl; add bacon and scallions. Toss with dressing until coated. Yields about 3/4 cup per serving. Notes • This colorful potato salad boasts tangy scallions and smoky turkey bacon. For variety, swap the red potatoes for Yukon Gold potatoes and diced red onion for the scallions.

2 pounds clean, scrubbed new red potatoes 6 eggs 1 pound bacon 1 onion, finely chopped 1 stalk celery, finely chopped 2 cups mayonnaise salt and pepper to taste
DIRECTIONS Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.

I just made this today for the 1st time to experiment for my party tomorrow and it is DELISH!!

BBQ Potato, Bacon & Corn Salad Prep Time: 25 min Total Time: 25 min Makes: 12 servings, about 1/2 cup each 1/3 cup KRAFT Ranch Dressing 1/3 cup KRAFT Original Barbecue Sauce 2 Tbsp. GREY POUPON Dijon Mustard 3 lb. small red potatoes, cooked, quartered 1 can (11 oz.) whole kernel corn, drained 1/2 cup sliced celery 1/2 cup chopped red peppers 1/2 cup chopped red onions 8 slices OSCAR MAYER Bacon, crisply cooked, crumbled
MIX dressing, barbecue sauce and mustard in large bowl.
ADD all remaining ingredients except for the bacon; mix lightly.
SPRINKLE top of salad with bacon. Serve immediately or refrigerate until ready to serve.
