calling all italians!! looking for a good marinara recipe
i am half italian, raised italian.
i feel like my marinara sauce is lacking.when i go to a restaurant, if a marinara is really good, i find myself eating it by the spoonful when we are done eating all the mozz sticks or calamari.
care to share your recipe?? what can i do to my marinara to make it stand alone good????

I start with a little olive oil in the bottom of the sauce pan and then add garlic. Simmer it. Next add crushed tomato ( sometimes I poach fresh, peel, and then put them in the food processor). Season. Cook on low all day long all day long. Undercooked sauce is nasty.
Easy :)

you can try this, in a pinch i make this, & ist quick & easy..
2 cans of whole plum tomatoes 1 small onion 4-6 cloves garlic
take some evoo in pan & let it get hot. add the onion, I actually grate mine with a cheese grater.. let that cook & get transulent then add very thin sliced garlic cook until you pretty much smell it all come toegtehr, but dont let the garlic or onions burn
add some orgeano, s&p & basil,
next before adding the tomatoes , grab a colander & squezze them in you hands , let the juice come out & add the chunks of the tomatoes to the pot,,
cook for approx 1/2 hour to hour ,,
its really good..
I just made home pizza the othe rnight & used this sauce for it , & the rest for left over pasta hth

I add shredded carrot to the garlic and onions. Sometimes I make a really good batch but then I'll have many "eh" batches.

here's my grandma's recipe:
2 cans whole peeled tomatos 1 can past 4 tbs olive oil 4 cloves garlic minced 1/4 cup chopped parsley 1/2 tsp salt 1/2 cup red wine
In med bowl blend whole tomatos (hand crushing) & paste In lg saucepan warm olive oil over med heat--add garlic - cook but dont brown pour tomatos into saucepan & stir cook for 10 min add parsely salt and wine reduce to low and simmer until sauce thickens --------------- While many people put oregano in their sauce, I dont like oregano in my sacuce unless i'm making pizza sauce. Also, while i put onions in my regular sauce, i dont put them in my marinara sauce. While the above is my grandma's recipe, I prefer adding a handful of chopped fresh basil too.
