i make a cold pasta salad with either cheese tortellini or rotini
i fry up some garlic & oil, then i add carrots , sliced thin, sundried tomatoes, argulula.. Soemtimes i may add peppers & mozarrella & tomatoes ,, very tasty

i use
spiral pasta
chopped
red pepper
green pepper
tomato
chopped or shredded mutz

i make pasta like normal and put in a ziti tray
throw in all veggies
put on salad dressing and mix around
i let it cool
then i add mutz so it doesnt melt when it is warm and put in fridge

serve cold

this is my ultimate quickie cold pasta salad...


cook cheese tortellini according to package directions..then rinse thoroughly with cold water to cool...then add premade brushetta topping to it, mix well, and then top with fresh grated parm cheese....

nice, easy, and it can be served cold, or room temp....

this one is easy and good

cook 1 lb orzo to al dente
drain and add
3 chopped scallions
crumbled feta cheese
halved cherry tomatos
chopped basil
pine nuts

dress it with olive oil and a littel bit of vinegar and a tad of honey and salt and pepper

its a huge hit every time

Chick Peas
Roasted Peppers
Olives
Leftover Salad dressing from the greek restaurant

This was great over baby greens & full of fiber! You can add what you like.

I make a lb of farfelle pasta. Then I add a can of black olives, cherry tomatoes, feta cheese and greek salad dressing. Mix it up and serve. Sometimes I add grilled chicken or rotisserie chicken to it.

Greek pasta salad!

1/2 cup olive oil
1/2 cup red wine vinegar
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
3/4 teaspoon ground black pepper
3/4 teaspoon white sugar
2 1/2 cups cooked elbow macaroni
3 cups fresh sliced mushrooms
15 cherry tomatoes, halved
1 cup sliced red bell peppers
3/4 cup crumbled feta cheese
1/2 cup chopped red onions
1 (4 ounce) can whole black olives
3/4 cup sliced pepperoni sausage, cut into strips


DIRECTIONS
In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, green onions, olives, and pepperoni. Toss until evenly coated. Cover, and chill 2 hours or overnight.

Your post had me craving pasta salad today, so I got ideas from old posts and created a delicious dish. I made brown rice penne pasta (from trader joe's), with TJ's fresh brushetta, black olives, chick peas, and grilled chicken (which I marinated in balsamic and EVOO). A little salt and pepper and a few extra swirls of EVOO and I was in heaven! Probably would be even better with tortellini, but my DH is lactose.
