Im looking for different ideas.. if there really is anyway to make it more than one way?

i do them in a frying pan

i basically cook thin chicken breasts first- i'll season them with salt pepper, a little cummin, paprika, chili powder and onion powder. once those are cooked up, i cut them into bit size pieces

then i put the tortilla in the frying pan, throw on shredded cheese on top and then sprinkle the chicken.

you can add chopped veggies to make it a little different .... i have frozen chopped broccoli in the freezer, so next time i might want to sprinkle some chopped broccoli as well...

Heat up the tortilla quickly on both sides, top with monterey pepper jack and sliced chicken, fold tortilla over and brush one side with a little vegetable oil and sprinkle with salt, put in frying pan and cook until crispy, brush other side with a little more oil and salt and flip over and cook until done.
This is the way America's Test Kitchen does it and it makes the outside so good, like a little tortilla chip, crispy and a salty. Yum yum yum!
