In the food processor, I chop up 2 garlic cloves, an onion, 2 carrots and 2-3 stalks of celery. I do it all separately.
In a pot, I melt a bit of butter, then add the onion and garlic and cook until translucent.
I add the carrot and celery and stir for 5 minutes.
I add the chicken...I make a small pot since it's just for DH, so I don't add a big chicken. Just 2-3 breasts. Apparently, bone in is better.
Then I stir for a few minutes.
Then I add a container of chicken broth, some water, salt and pepper. You can also add parsley, maybe some sage or thyme.
Bring to a boil, then lower heat to simmer.
I cook for an hour or so, then I scoop out the chicken. I use 2 forks and shred the chicken into pieces and dump back in and cook for another 20 minutes.
In a small pot, I'll cook some small egg noodles and when I give DH his bowl, I'll add some of the noodles in, too. But that is optional. I don't cook the noodles with the soup b/c they soak up a lot of the broth.
BTW, I'm a vegetarian, so I have never tasted this, but DH LOOOOOVES it!

I like chunks of veggies in my soup so I third my veggies. About 8 carrots, 5 celery, two large onions (cut in half). First I take one of the carrots, celery and a half of onion and chop it up small. I put about three swirls of olive oil in a soup pot and saute the veggies until a little soft. Then i take a whole roaster chicken and throw it in the pot and let the skin sizzle and brown a little. I throw the rest of the veggies in and add water till I have covered the chicken. Salt, pepper and a handful of fresh parsley and put on high until it boils. Add two bullion cubes turn the heat down to low, cover and cook for 2-3 hours...easy and delicious!
