Question about salaried employees
Is there a website that has information about salaried employees and working over or under the scheduled number of hours per week? Or if anyone is familiar with this I would appreciate any info.

I believe unless you are a manager you are supposed to be paid for OT. Not that this usually happens.
I think the department of labor website should have this info.

I know salaried positions are overtime exempt but what happens when you leave early one day. Do you have to use vacation time or is it just considered leaving early because some days you stay a bit late?

I would think that is something you work out with your employer.
In my office, I am a salaried employee. If I happen to need to leave early one day, I will try to make it up the next day. I usually discuss it with one of my bosses.
