I need some good ways to cook fish
I have Tilapia at home. I don't eat fish but I want DS to try fish and DH will eat it. I need some good recipes
I think I can try
Tilapia Flounder Salmon
ETS: i think I can try as in..those are the fish I feel confident in cooking!

Flounder: fried stuffed with feta & spinach stuffed with a crab meat mixtire
tilapia: oregenata broiled with EVOO, lemon, garlic & wine fried
salmon: we don't like salmon, no help here!
you can do so much... if you like olives and tomatoes, you can bake it with that garlic & EVOO, etc. you can do so much with tilapia!!!

for salmon, which I love, I use a bit of olive oil, butter, some dill (very little), salt, pepper, lemon juice, and white wine. sooo yummy. I eat it with white rice.

Try Cod: its similar in flavor to flounder, but thicker and kind of meatier. You can bake it in the oven, or bread and fry it (similar to how you would make a chicken cutlet).

Agree with flounder ideas above. Bread crumbs, lemon, fried, etc. Yum!
I love salmon, plain, broiled with salt pepper, lemon and tartar sauce but another great recipe with a bit of sweetness is:
Brown Sugar Glazed Salmon: Ingredients
1/4 cup packed light brown sugar 2 tablespoons Dijon mustard 4 (6 ounce) boneless salmon fillets salt and ground black pepper to taste
Mix sugar and mustard then cover salmon with mixyure, bake until desired doneness. I always line baking dish with foil for easy clean up.
This is a good dipping sauce for fish, especially salmon:
DILL SAUCE: 1/3 cup sour cream 1/3 cup mayonnaise 1 tablespoon finely chopped onion-optional 1 teaspoon lemon juice 1 teaspoon prepared horseradish or dijon 3/4 teaspoon dill weed 1/4 teaspoon garlic salt pepper to taste

DH and I prefer our fish simple. I some EVOO on a baking sheet, sprinkle fish with s&p, lemon, you can also put some cayenne peper or old bay or garlic powder--whatever. Then I broil it for 10 minutes. Serve w/brown rice or baled potato and some veggies. Simple and healthy!

I would grill your Tilapia w/ taco seasoning and make fish tacos. All you need is a bag of cole slaw, rach dressing and salsa...anything you like...
Salmon I sometimes make my own honey mustard and put it on top and bake then broil.
Other than that, just plain grilling with spices is the best!

Same here.. sometimes we steam it with just salt, pepper, lemon juice or just lemon chunks. After its done, chop some parsley and garnish right before serving with rice, quinoa, couscous or salad.

I've always wanted to try a "Fish en Papillote" recipe. Melissa d'Arabian on Food Network has a nice sounding recipe:
Ingredients
* 1/2 red onion, chopped * 1 zucchini, chopped * 1 large carrot, chopped * 1 clove garlic, minced * 1 tablespoon extra-virgin olive oil * Kosher salt and freshly ground black pepper * 4 (4-ounce) sole fillets, hake, flounder or other white fish * 1 lemon, thinly sliced, seeds removed * 8 sprigs fresh thyme * 4 pats butter * 1/4 cup white wine
Directions
Preheat oven to 375 degrees F.
In a bowl, mix together the onion, zucchini, carrot and garlic. Adds the oil, season with salt and pepper, to taste, and toss to combine. Put each fish fillet in a large square of parchment paper and season with salt and pepper, to taste. Arrange the vegetables on top, dividing evenly. Top the vegetables with 2 lemon slices, 2 sprigs thyme, a pat of butter and 1 tablespoon white wine, layering in order. Fold the parchment paper around the edges tightly in 1/4-inch folds to create a half moon shape. Make sure you press as you crimp and fold to seal the packets well, otherwise the steam will escape. Arrange the packets on a baking sheet. Bake until the fish is cooked through, about 12 minutes, depending on the thickness of the fish. To serve, cut open the packets and serve directly in the parchment on a plate or remove the fish to the plate using a spatula, being sure you don't leave the juices behind.

mahi mahi is awesome too... i always make my fish tacos with that! its a light flakey white fish similar to tilapic and flounder!

the easist and most delicious salmon recipe ever... tastes like you ordered it at a restaurant
season the salmon with salt, pepper, and garlic powder
combine 1/3 cup each of water, soy sauce, and brown sugar and 1/4 cup oil (recipe calls for vegetable oil, i always use olive oil)
marinate the salmon in the mixture in a large ziploc bag in the fridge for at least 2 hours, turning it over ocassionally to make sure to coat both sides
loosely wrap each piece of salmon in aluminum foil with a couple of spoons of the marinade on top and seal
bake at 375 for about 30 minutes or until salmon flakes easily
make sure not to overcook it or the salmon can get dry
delish.... if you try it, let me know how it turns out

Tilapia- coat with Emril's essence and pan fry with some EVOO and butter
Salmon-cook in teriaky sauce. Or cover with EVOO, salt, pepper, butter and pesto and bake. Add grape tomatos at the end.

I wanted scallops once - I convinced DS (2 1/2) that they were "fish nuggets".
He helped me bread them and then I fried them. He even asks for the periodically.

I got DH to eat fish by making it this way, it's from allrecipes.com
1/2 cup Parmesan cheese 1/4 cup butter, softened 3 tablespoons mayonnaise 2 tablespoons fresh lemon juice 1/4 teaspoon dried basil 1/4 teaspoon ground black pepper 1/8 teaspoon onion powder 1/8 teaspoon celery salt 2 pounds tilapia fillets
Directions Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
