i guess it depends what you are going for, but i personally would balance it with a mixed greens salad with a vinegar-y dressing (not creamy like caesar) to cut through the richness of mac n cheese
if you want a hot side dish, roast a sheet pan of grape tomatoes with some evoo, garlic, s&p, and balsamic at high heat. this would also cut through the richness
