Re: Please give me your amazing crockpot recipes
There are so many great ideas for slow cooker meals online, if you check out Pinterest and cooking blogs like Skinnytaste. That's where I've been looking for inspiration. Also, a lot of the "women's magazines," such as Family Circle and Good Housekeeping and Better Homes & Gardens, often feature really innovative slow cooker ideas, so you may want to check out those magazine's websites.
Here are a few that I like (let me know if you want the actual recipes... I can probably dig up at least a link, but I think if you search online you can probably find them):
Butternut Squash Pearl Barley Risotto (Good Housekeeping)
Beef Stroganoff (Cooking Light)
Moo-Shu Pork (Family Circle)
Salsa Chicken -- There are many versions of this popular recipe out there online
I've also made a whole chicken in a crockpot, which makes for a good dinner, but also very versatile leftovers for another meal (soup, salads, wraps, tacos, etc.).

Re: Please give me your amazing crockpot recipes
Here's the recipe from Good Housekeeping -Slow Cooker Butternut Squash Barley Risotto (I'll try to post a link at the end):
•2 tablespoon(s) margarine or butter •2 shallots, thinly sliced •2 sprig(s) fresh thyme •2 cup(s) pearl barley •4 cup(s) lower-sodium chicken or vegetable broth •2 cup(s) water •1 large (2 1/2-pound) butternut squash, peeled and seeded, cut into 1/2-inch cubes •Salt •Pepper •1 ounce(s) Parmesan cheese, grated (2/3 cup) •2 tablespoon(s) chopped fresh flat-leaf parsley leaves --------------------------------------------------------------------------------
Directions
1.In 12-inch skillet, melt 1 tablespoon margarine on medium-high. Add shallots and cook 2 minutes or until golden, stirring often. Add thyme; cook 30 seconds. Add barley and cook 2 minutes or until toasted and golden, stirring often.
2.Transfer to 6-quart slow cooker bowl, along with broth, water, squash, and 1/2 teaspoon salt. Cover and cook on high 3 1/2 to 4 hours or until liquid is absorbed and squash is tender.
3.Uncover; discard thyme. Add Parmesan, remaining tablespoon margarine, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Gently stir until margarine and Parmesan melt. Transfer one-third of mixture to container; refrigerate up to 3 days. Transfer remaining mixture to serving dishes and garnish with parsley.

Re: Please give me your amazing crockpot recipes
Love this one!!! It was actually posted on here by someone else and it has become a cold weather staple!! I put the pork chops in frozen since mine sits in there a good 8-10 hrs.
French Onion Porkchops
4 boneless pork chops, about 1" thick 2 medium onion, sliced into rings 1 packet French Onion soup mix 1 can Cream of Mushroom soup 1/2 cup water 1/4 cup Worestershire 1 tsp. dried parsely 1 tsp. dried Italian seasoning Salt and pepper Egg noodles
Slice onions into rings and lay in bottom of crockpot. Lay pork chops on top, sprinkl w/salt and pepper. Whisk together mushroom soup, water, onion soup, worcestershire and parsely and Italian seasoning. Pour over pork chops. Set on low, about 6-8 hours.
When ready to serve, serve over cooked egg noodles.
