Question about meatballs in sauce

Do you cook the meatballs first, then add them to the sauce or do you throw the meatballs in to cook with the sauce?

I always cook them at least a bit on the outside first. I don't like them totally mushy.

I always brown the outsides first in the same pan I use to make the sauce. Then drain the grease, saute some onions and garlic in the pan and then deglaze it with red wine. Then add the rest of the ingredients for the sauce.

We like them crispy on the outside, so we fry or oven-fry first.

Ditto. Mostly baked in the oven for a nice texture on the outside.

If I have the extra time, i throw the meatballs right in, without browning. They come out so tender and delicious

I do that too. It makes them sooo tender! We don't like crispiness on the outside of our meatballs.

For those of you that cook your meatballs in the sauce...approximately how long does it take for them to cook completely? I always wanted to do this, but afraid they would be undercooked

Depends on how much time I have to keep my sauce up. I like to just throw them in the sauce to cook, but if I can't let them cook for awhile, then I brown them in the oven and then put them in the sauce to finish cooking.

I usually start the sauce at 1 on sunday, and we eat at 5. I just keep it covered on low and give a stir every hour. I feel like the lower & slower you cook them, the better they turn out. PLus the sauce tastes so much better if you let it take it's time.

Question for those that dont brown their meatballs.. Does this make your sauce greasy? I bake mine and there is always quite a bit of fat on the roasting sheet even though I use 90% lean sirloin.

I grew up with my mom cooking them in the sauce. She of course didn't use lean meat, but she had this great tool that allowed you to get the grease out & you stop when you hit sauce (but I guess you could use a vaster to suck off the fat that surfaces).

I throw them in the sauce to cook, but I use lean meat, so it's not oily at all.

I fry mine in olive oil with onions and garlic. Drain them and let them sit for about 30 minutes, and then add them to the sauce.

I've done both!

I think I prefer them cooked right in the sauce - more juicy and soft! They come out great like this in the slow cooker!

However I usually use frozen meatballs because I am lazy.
