Corn casserole
Ok give me your best one! I made one last year that was really good tasting but I thought it came out a little dry. I know alot of people use Paula deans but I dont want all the butter and cheese in mine. Thank you!

Re: Corn casserole
I make Paula Dean's and just leave off the cheese... tastes much better that way IMO!

Re: Corn casserole
I make one of Paula Deen's, but it has no cheese. It has jiffy cornbread mix, melted butter, eggs, sour cream, whole corn kernels, and creamed corn. Definitely not light, but it's a holiday dish, and everyone likes it.
If you are looking for one with fresher ingredients, Ina Garten has a recipe - sagaponac (sp?) corn pudding. I personally have never made it, but a friend recommended the recipe. I usually like Ina's recipes for entertaining... I have all of her cookbooks. I think her recipe is a little more elegant than Paula's, definitely more of a farm-to-table vibe.
