The first thing that came to mind was french toast casserole. Then I would do some sort of frittata with potatoes sliced thinly, spinach, cheese, bacon or pancetta. Maybe lox and cream cheese with some bagels if your family enjoys that and homemade muffins.
Now I want breakfast..lol

word.
Maybe make a quiche or two? Then a french toast casserole and bacon/sausage? I also saw a tater-tot cassarole on Pinterest that looked pretty redic.

We do a sausage pie. Take a roll of breakfast sausage, cook and drain. Place that into an unbaked pie shell, add some shredded cheese (any kind, really) and 8 beaten eggs. If you want to make it a little healthier you can add some chopped veggies but I usually don't. I always add the eggs last because they settle around the other ingredients. Bake at 350 until set. We serve it with Hollandaise sauce.
