Anyone have a great sausage & pepper recipe?
I tend to not love sausage but for some reason I've been really in the mood for a good sausage and pepper dinner. I have one of those round (spiral) sausages that I want to use (I don't like the fat italian/sweet sausage). Any great recipes? ALso do you use tomato of any kind or do you prefer without? I think I lean towards without but am open to suggestions. Thanks!

My favorite is on the grill, with just peppers, onions, seasoning and EVOO.
I don't like it with a ton of sauce either.
You can do it in the crock pot too if you're feeliing lazy.

I par-boil the whole sausage(s) in about a half inch of water first. Once the water boils off I cut the sausage into slices add some EVOO and sliced onions and let the sausage get a bit browned on the sides. Then I add sliced peppers and some minced garlic. When the peppers have softened a bit I usually add in a half cup to a cup of tomato sauce/tomato puree.

I make it all different ways, but one of my favorite ways is to bake it with potatoes. The potatoes absorb all the flavors and everything tastes soooo good!!!

I cook it the old school (read un-healthy) way that my grandmother used to:
I use a combination of sweet and hot italian sausage. Cut sausage links into 1-2" pieces. Fry in a pan of olive oil until browned and cooked through. Remove sausage from pan - DO NOT discard oil.
Cut onion into slices. Fry those in the same oil used for the sausage (add more if necessary) until soft and tender. Cut italian peppers into long strips. Add to onions and cook until peppers are also soft and tender.
Put sausage back in the pan with the onions and peppers and mix well.

I always brown my sausage first, then I cook the peppers and onions with the sausage in the onion covered with foil. I add a little bit of tomato sauce and some chicken broth to make a little bit of a sauce. I take the cover off at the end to brown it a bit.

I love this recipe. I skip the salt though. And after I lightly brown the sausages and put them aside, I cut them.

I par boil the sausages as well for about 10 min. Then I remove them from the pan to cool a bit, and sauté the sliced onions, peppers and garlic together until soft. Then I slice the sausage and add it to the pan to get crispy. I have tried it with tomato sauce/puree and prefer it without.
