easy easter dishes
I know its a little early, but just wanted to start planning a little... I am hosting Easter this year... what are some easy to prepare menus? all i can think of is baked ziti and maybe a ham. anything else for sides, etc?

We have some appetizers out like:
Stuffed olives, fresh cheeses, crackers, roasted peppers, proscuitto wrapped pretzels.
Then we usually do 1st course of pasta.
Then followed by a pork roast with potatoes, vegetables, and stuff mushrooms

For side dishes:
a big filled salad with cucumbers, onions, olives, lettuce, cherry tomatoes, chick peas or whatever you like in your salad
mashed or twiced baked potatoes.
Twice baked receipe. Here is my receipe. You can do this ahead of time:
Preheat oven to 400 degrees.
Scrub and clean Idaho potatoes. I use a fork to poke a few times on both sides of the potato preventing it from bursting.
I place them in the oven for about an hour or till done.
I let them cool off.
Then I cut a circle on top of the potato enough so I can scoop out the potato inside.
I do that to all of them. I put all the potato in a bowl, I add salt, pepper, butter, and some milk. I whip them up like mashed potatoes.
I then grate extra sharp cheddar cheese
I take a baking sheet, cover it one sheet of foil spray with pam and line each potato on the sheet, a few inches apart.
I then take the mashed potatoes and fill each potato and sprinkle the cheese on top. Pop in the even and let it cook for another 10 mins till cheese is well melted.
Its a crowd pleaser.
