Paleo cookies - this recipe is decent
After trying and not liking a bunch of paleo cookie recipes I decided to share this one because it was actually pretty good. I used mini dark chocolate chips in mine.
One thing I would suggest is bringing eggs to room temp before mixing with the melted coconut oil, or if the eggs are cold it will solidify the oil making it harder to mix.

What you will need: 1 cup of coconut flour (you can find this at almost any health food store) 1/2 cup of coconut oil 3 tbs of raw honey 4 eggs 1/2 tsp of vanilla extract 1/8 tsp of sea salt 1/2 cup of shredded unsweetened coconut 3/4 cups of gluten free chocolate chips (if you can not find gluten free you can use regular)
Directions: Preheat the oven to 375 degrees. Melt the honey and coconut oil together in the microwave for about 15 seconds. In a large bowl mix together the coconut oil, raw honey, eggs, vanilla extract and sea salt. Stir in the coconut flour, shredded coconut and chocolate chips. Line a baking sheet with parchment paper and roll out little tbs size balls of cookie dough. Place on the baking sheet and gently press down so they look pretty once baked :) Bake for 12-15 or until golden brown.

Is it a strong coconut taste? they look and sound great....but i'm not a huge fan of coconut.....

How do you get raw honey to mix in with the other ingredients? Do you melt it first?
ETA: duh, I should have read the directions first.
I wonder if I can try these with egg replacer. I love coconut.

Thank you..these look delicious! Will def try! Just went out and got my first package of coconut flour today to make crab cakes for Friday (lent)
Was def going to look into making a dessert too with it! Good to know a lot of them s.uc.k! Thank you for being my trial and error!
