Stew recipes?

I have a lamb stew on the stove right now. I've been making it for years, and it gets raves. It got me wondering about other people's stew recipes. My mom makes an incredible chicken stew and another, even more delicious beef stew, but they're very involved. Anyone care to share your stew recipes?

My beef stew is super simple...I brown the beef (cubed small) then add in onion, celery, carrot, garlic, and 2-3 fresh bay leaves...after a few minutes I add in beef broth and a cup or more of red wine. I let it cook for an hour or more, then thicken it a bit with cornstarch. I always make bisquik dumplings on top, never potatoes!

this sounds super easy and good. I may try doing something like this. :) Are there any other seasonings you suggest I add or does it not need anything else?
