Ideas for car-friendly recipe
DH and I will be attending a family pig roast over one of the upcoming weekends. It's about a two hour car drive, and we'll just be going for the day (so no fridge or anything). I'd like to make something to bring, but I don't want it to go bad in the car.
We are either going to have the AC on or the windows open (if it's mild out) the entire time. So do you think pretty much anything (not like...deviled eggs or a pouch of ice cream or something) should be okay? If not, does anyone have some suggestions?
I'd like to make something fall-themed.
Also...I know I can bring a cooler and put it in there. However, DH and I are hot messes whenever we have to leave for somewhere early in the morning, and we are just going to forget so I'd prefer something that doesn't need a cooler!

A nice cold pasta salad. Any variation of that will keep well and you can toss it in a large Tupperware with cover. It's easy and travels well.

You could always bring a watermelon or a tray of cookies. But, I think most things would be fine in the car for that long. You leave things out at a BBQ for 6+ hours and people still eat them - AND that's in the height of summer!
