Re: Please share your turkey recipe

My best advice is brine your turkey!!! I tried this for the 1st time a few years ago and the turkey came out moist and delicious. Other than that, I season the turkey with adobo, thyme, rosemary and whatever other spices I have lying around. I also put onions (cut in half), carrots and celery and a lemon or two (cut in half also) inside the cavity before trussing and putting in the oven (I do my stuffing separately). That is also supposed to help keep the bird moist. I also cook the turkey breast side down and then flip it over to brown the top as well.

If you get a good turkey, you dont have to do anything. It will be juicy enough.
I usually just put a few pats of butter on top with salt and pepper.

I just bought a brining kit and bucket at Whole Foods (only $12) then following Alton Brown's recipe, only making more of an herb butter under skin. And stuffing cavity with onion, celery, lemon, and herbs (skipping the apple aromatics). First time too - brining I hear is the way to go. Alton says cook at 500 first 30 minutes then lower. Good luck!
