jams92 Member since 1/12 6105 total posts Name:	Re: Can I make eggplant parm a day ahead? i would keep the components separate - if you want to fry up the eggplant the night before it should be fine (it may not have a crunch to it but it should be fine), and when you are ready to cook it, i would add the sauce and cheese i wouldnt leave it sitting in the sauce over night
