Can I make eggplant parm a day ahead?
Can I make eggplant parm a day before, keep it in the fridge, and then bake it on the day of the dinner?

i would keep the components separate - if you want to fry up the eggplant the night before it should be fine (it may not have a crunch to it but it should be fine), and when you are ready to cook it, i would add the sauce and cheese i wouldnt leave it sitting in the sauce over night

I think it tastes better after the flavors have time to set - definitely can make ahead.

this..I would bake it and then all you need to do is reheat it the next day and maybe add some sauce.
