Artichoke ravioli...what kind of sauce?
I want to avoid a tomato sauce because I feel like ravioli that have more unique fillings tend to have their tastes masked by tomato sauce.
All I'm coming up with is olive oil/garlic/toasted walnuts or pine nuts OR some kind of white wine sauce...any other ideas?

Some kind of pesto? Maybe like a spinach/walnut pesto, if you think traditional basil will be overpowering.. and spinach always goes well with artichokes.
Or maybe a piccata type sauce - butter, lemon, capers.
This would be very rich - but I know some people like to dip artichoke leaves in hollandaise sauce. So maybe you could serve a ramiken of hollandaise on the side for dipping the plain ravioli into?

trader joes makes amazinnggggggggggg artichoke ravioli with cheese & olive. handsdown one of the greatest things I ever had. i love pesto on them.

I may have to take a trip over the bridge to the Bronx location. That is the closest one to me.
I think a simple sauce would enhance the artichoke filling - a lemon-butter-wine sauce, sort of mimicking the butter sauce used for dipping artichoke leaves. Of course Christine's idea of a hollandaise sounds absolutely divine.

Probably too late but I love a sage butter sauce
I use a cup of pasta water, butter, olive oil, and sage or thyme. I ad salt , pepper, and hot pepper flakes!
