If you host a holiday
do you make food ahead and freeze?
I didn't do that this year and man, am I feeling overwhelmed!

No, but I will make the mashed potatoes tomorrow; make some of the apps (dips) on Tues and get the veggies "ready" (washed, cut, peeled etc.) on Tues

I don't, but I usually plan to serve a lot of dishes that I can make a day or two in advance. I don't make it SO far in advance that I need to freeze anything, but I will make or assemble things that I can keep in the fridge and then just bake or reheat the day of. The quality of the food doesn't suffer, but it gives me peace of mind.
If something requires a lot of last minute prep, it doesn't make it onto my menu!
I usually dedicate two days before any big holiday or party I am hosting for cooking and prepping.

This year was different with my mom's illness, so I did make and freeze stuff in advance. But usually, no.

Depends on the food. This year I did.
I made all my sauce the week before Xmas and then froze it. I defrosted it the day I needed it and let it warm up in the Crock Pot all day.
I made stuffed shells for Xmas Day and I did those in advance too. I stuffed all of the shells and laid them in a single layer in a tin and froze them with NO sauce. On Xmas Day I took them right out of the freezer, covered them in sauce, and baked. They were delicious and perfect. You would never know they were frozen, the key is to freeze them without sauce.

It made the holidays soooooo much easier. I was able to socialize and enjoy Xmas instead of bring stuck in the kitchen all day and night.

I don't host many holidays, but when I have parties I try to make things a day or so ahead of time so that they are just ready to pop in the oven (dips, appetizers, etc). But I don't do this necessarily to lower the amount of work, but moreso so that the kitchen can be clean after my cooking marathon, since we just have one big open kitchen-dining-living space.
