What to do with shredded roasted chicken?
I have a bunch leftover from yesterday. Was planning on making chicken noodle soup but really not in the mood for it.
What other soups/dishes have you all done w/ shredded chicken?
Had chicken wraps yesterday, so quesadillas, burritos not an option.

What to do with shredded roasted chicken?
you could use it in a tomato sauce with pasta, I call it shredded chicken cacciatore.
ETA: when I'm being really good and don't want the carbs I put it over cooked spinach, it's delicious.

What to do with shredded roasted chicken?
Chicken chili is always my go to. Saute an onion then add garlic, green chiles, spices (lots of chili powder and cumin) and cook for another minute or two. Then I add a large can of tomato puree, one or two cans of chicken broth, three cans of beans (red, black, and canelini) along with the chicken and some canned or frozen corn. Simmer for at least 20-30 minutes and serve with shredded cheddar, sour cream, and tostitos scoops. Probably our favorite meal here!

My favorite things to do with shredded chicken:
-mixed with a can of cream of mushroom soup and broccoli (sometimes i add egg noodles)
-chicken tortilla soup
-chicken vegetable noodle soup
-tacos
-quinoa chicken and cheese casserole (annie's eats blog- so good)
-over a salad (usually i do buffalo chicken salad, but you can also do greek salad or just plain mixed salad)
-chicken salad

Sorry to hijack the post but--- Does your DD eat this? I make something similar but never give it to her because of the spicy-ness, like the cumin... just wondering

I've let her try it but she really won't eat it. I usually don't give her anything with chili powder bc she ends up with red spots around her mouth so I think she has some sort of allergy to it.

Quinoa chicken and cheese casserole sounds like a winner for tonight! MMMM.

i wouldnt worry about the cumin, just take out or reduce the chili powder. my kids eat tons of stuff with cumin and love it.
As for leftover chicken, i make chicken salad with 1 avocado, salt and some apple cider vinegar.

It is just DH and me so we usually have e ough for leftovers.
Chicken BLT
Quesadillas with leftover veggies added
Mixed with BBQ sauce to make sliders, serve with cole slaw.
Chicken salad
Tossed with bowtie pasta garlic and oil, peas and parmesaen.

Also, while we are on the topic of shredding chicken, did you now you can shred warm chicken breasts in a stand mixer?

Yup--that's pretty much it. Use the paddle.
As long as they are still warm it works.
Instructions
I am going to do it this weekend to make the tacquitos DrMeg posted, since I never have leftover chicken.
