passover main course recipes
I normally do brisket but there's only going to be 4 of us and my sister doesn't eat red meat. I'm thinking a chicken dish or salmon. Please nothing too involved and nothing with a ton of ingredients. Does anyone have a good recipe they can share with me? TIA!

passover main course recipes
Why not do a roast chicken or turkey breast? Or just buy a big filet of salmon and bake it with spices, etc.? Those are just as easy as brisket and could go with all the same sides...

How about chicken cacciatore? Super easy. I make in the crockpot.

I would definitely do a roast chicken or a turkey breast. You could also do cornish hens.

My MIL did a salmon from the Cookbook Kosher by Design (she knows the person who wrote it).
It wasn't the main course for a sedar, but she made it during the week as one of her dinner.

Chicken Cacciatore
3 lbs chicken, cut up in pieces 1 large onion, thinly sliced 1 (6 ounce) can tomato paste 1 can of crushed tomatoes 6 ounces sliced mushrooms 1 green bell pepper, finely chopped -I've also used other color peppers for flavor and color 2 -4 garlic cloves, minced 2 teaspoons oregano 1 teaspoon dried basil 1/2 teaspoon celery powder 1/2 cup dry white wine 3 tablespoons olive oil 1 teaspoon crushed red pepper flakes (optional)
ETA: CARROTS!!!! Put in lots of carrots either cut or baby carrots.
Throw it all in the crockpot, mix, and cook for 7 hours on low or 3-4 hours on high.
For Passover: serve over Passover noodles or Matzah farfel.
