Favorite no-oven meals?
Grilling is the obvious one...burgers, turkey burgers, sausage burgers, marinated chicken, etc. I have two bbq pans - one with holes and one without. I use the one with holes to grill veggies and the other for nearly anything I would do in a skillet.
Are you okay with the stove top? Tacos, stir fries, ST bruschetta chicken, homemade sloppy joes, coconut curry chicken, sauteed shrimp with lemon, feta, tomatoes, and spinach. Pulled pork in the crockpot.

I like grilled chicken kabobs with grilled vegetable skewers (tomatoes, onions, mushrooms, green and red peppers).
I like salads too: buffalo chicken salad, caesar salad, spinach blue cheese salad (you could do grilled steak with that).

I use my crock pot a lot in the summer since it doesn't heat up the whole apartment!
Salads are a big favorite: -Ceasar -Spinach with craisins, shredded carrots and crumbled blue cheese or feta. -Romaine, grilled chicken, red peppers, tomatoes, cucumbers and balsamic dressing. -Cold tortellini salad.
I use the stove top for easy things like grilled chicken, tacos, quesadillas, pasta etc.
Angel hair with garlic, oil and parmesan is quick and easy.
Sometimes I'll go buy a bunch of cold cuts, lettuce, tomato etc. and we will have wraps for dinner.

My new favorite is halved baby potatoes, broccoli, zucchini and red onion tossed with olive oil, sea salt & pepper. I grilled them in a stainless steel grill pan on the bbq grill. So good! Especially when the broccoli and onion get charred.
I had it the next day for lunch at room temp and it was actually even better!

Favorite no-oven meals?
My favorite no-oven meal is fajitas. We usually make them once a week.
I also make a cold tortellini salad with Italian dressing, shredded cheddar, broccoli, red/green peppers and green olives and it's delicious!

I use my outdoor grill all year long - Even if I have to shoevl to get to it.
I have never cooked a steak or burger any other way ..........

Lately I've been making a lot of grain based salads. They stay longer than anything with a lettuce base, so you can make them in advance and then eat them for a few days. You can add veggies, cheese, shrimp/chicken/meat, whatever.
This week I made a farro-based salad I found on Skinnytaste (it had cucumbers, sundried tomatoes, red bell peppers, feta cheese, etc.). I also like a rainbow barley salad I found in a WW cookbook. And the Mediterranean quinoa salad on Skinny Taste.
They are healthy, make for good lunches, or good dinner sides (with a piece of grilled chicken or steak).
Also, we have a small electric griddle, and my DH makes really good quesadillas on them. If we want a really lazy, quick meal, we will buy already cooked chicken and just add cheese, scallions, etc. We have the griddle, but a big skillet will do the job.
This week I made slow cooker pulled bbq chicken that we had on sandwiches (pulled pork is good for that, too).
